Perfect for a light summer dinner.
It’s that time of year – the weekends leading up to Christmas are packed with holiday parties. We’ve all been to them and I’ve certainly had my share. Some are more elegant, some can be corporate and stuffy and some can be boozy. I’ve seen friends and coworkers drink too much, karoke too much, dance a little too much – thank goodness I’ve never been guilty of any of those things. Regardless, it’s a great time to break out the festive sweaters, have a guzlet of your beverage of choice and enjoy the holiday spirit with our friends, family and office mates. Growing up, I always thought salmon patties were a staple only on Southern tables. After living here in Chicago for awhile, I’ve learned I was wrong. Dead wrong. Ok, that’s a bit dramatic, but I now know salmon patties are pretty much a universal comfort food. And they don’t have to be as heavy as other comfort foods like meatloaf or chicken pot pie. Unless you eat, like 6 of them in a row. Which, of course, I am prone to do.

I’m writing this on a Saturday, but I actually made this a few weeks back. But it was on a Friday – I didn’t grow up Catholic, but for some reason I always like the idea of fish on Friday evenings after work. And I’m a BIG salmon fan – I love it and love finding different ways to prepare it. So I found this recipe for Almond Crusted Salmon with Caramelized Onions and Fresh Basil over at WholeFoods.com and it came out really well. I also mashed up some taters and roasted some asparagus. Not too heavy – a perfect late spring dish with a pop of flavor – delicious!
