This is one of my favorite dishes when the weather starts getting cooler. It’s that time of year in Chicago when the humidity goes away (mostly) and the leaves have started changing. Coming from Texas, I’ve noticed Chicago tends to have much more of a definite autumn season. I didn’t realize how much I missed it – but I enjoy seeing all the leaves change color and pile up on the ground. It’s fun to go out in long sleeves and sweaters – before having to bundle up in 15 layers of clothing and feel like the little brother in A Christmas Story. Lemme tell you – coming from North Carolina and Texas, that gets old, real quick.

But for now, it’s time for more heartier dishes. Pumpkins, scarecrows, root vegetables and good, hearty meats. FUN!

Pardon my salty language (hey-o, another food pun!), but this was damn delicious! I’m doing a lot of running these days because I’m training for a big race coming up in October (looking at you with Clint Eastwood eyes, Chicago Marathon), so I’m trying to eat a lot of carbs. I was on some other food blogs earlier this week, trying to find some good carby recipes – and I found one for pasta with mushrooms. It sounded a little boring to me, but I started craving shrooms – and I liked the fact that the original recipe called for roasting the shrooms. So I was fascinated and decided to kick the recipe up a notch with some chicken and a modified sauce.

Chicken Salsa Verde Casserole

This is one of the best (if not THE best) casseroles, in the history of the WORLD. Seriously – I’ve made this for company more than once – always a home run.

I found this recipe cause I was at Trader Joe’s and noticed their Salsa Verde. Made me start remembering a lot of the Tex Mex food I ate when I lived in Texas, so I bought some and resolved to make something good with it. I looked up salsa verde recipes and actually found it on the web.

It’s a big favorite around my house and kinda perfect for any time of the year, although I think casseroles are best as good wintery comfort food. But whatever. Make it today. You won’t regret it.
