Chocolate chip pecan pie would be great served up at Thanksgiving, if you’re looking for something a little different from the usual pumpkin pies and pecan pies. This is also one of the easiest desserts I’ve ever made. It’s really one of the easiest of anything I’ve ever made, honestly. And so delicious – the ease-of-making vs delicious taste ratio is off the charts with this one! Once I tasted the first bite – yep, just one teency-tiny bite – Bam! My face was slapped so fast I didn’t realize what I was even doing to myself!
This pie almost has the consistency of a giant, rich, soft, delicious cookie. And, pending holidays aside, it’s the perfect pie to make for giving to someone; whether it’s for a dinner party, or new neighbors – it is guaranteed to put a smile on their face.
Start by mixing 2 beaten eggs with a stick of butter. Once this is combined and creamy, add 1 cup sugar and 1/2 cup of flour. Combine these 4 ingredients well and then add the following: 1 cup chopped pecans, 1 cup chocolate chips and 1 tsp vanilla. I used a mixture of semi-sweet and dark chocolate chips. And I might have added more than a cup. And by ‘might have’, I mean that I definitely added more than a cup. Also, using semi-sweet would probably be a crowd favorite.
Once all this is combined, pour into your pie shell. Don’t forget to stab the bottom of the pie shell with a fork! I also used a refrigerated pie shell that I rolled out and fit into a glass pie pan. I had to trim the edges, but this worked out beautifully for the pie.
Bake at 375 for a good 40-45 minutes. And I can tell you from hands-on, personal experience this pie is best served warm. Probably with whipped cream or even ice cream, as well – but I didn’t have any on hand. But it still didn’t stop me from enjoying!
- 2 beaten eggs
- 1 stick melted butter
- 1 cup sugar
- 1/2 cup flour
- 1 cup chopped pecans
- 1 cup semi-sweet chocolate chips
- 1 tsp vanilla
Mix eggs and butter well, then add sugar and flour. Combine these 4 ingredients and then add the pecans, chocolate chips and vanilla. Mix everything really well and pour into unbaked pie shell. Bake at 375 for about 45 minutes. Serve warm, with whipped cream and/or ice cream. Take a bite and slap your face.
