There’s something to be said for vanilla.
I don’t recall ever really having a Blondie before (I guess?). I know they’re pretty common and lots of folks swear by them. This recipe is from Saveur.com. It’s so mind-bogglingly easy and over-the-top delicious.
Guess I’ve always just been more of a brownie guy. Where have blondies been all my life?
And these are like brownies, just without the chocolate. But what they do have is a rich, vanilla flavor that knocked my damn socks off. Here’s how to whip up a quick batch:
Whisk together some flour, baking soda and salt – set aside. In a separate bowl, combine some white sugar, brown sugar, eggs and vanilla.
Beat this mixture together until smooth. Then, add in some butter. A lot of butter. Like, 12 oz of butter – that’s a stick and a half!
Then, combine the dry ingredients with the sugar and eggs and butter mixture. Oh, lordy. Once this is just combined, add in 2 cups of white chocolate chips, which is the whole amount of a standard-size bag from the grocery store.
Spread the batter in a 9×13 pan and bake for about 25-35 mins. Go ahead and remove your socks, cause they’re gonna get knocked off anyway. Enjoy!

12 tbsp unsalted butter, melted
2 cups flour
1 ½ tsp baking powder
¼ tsp salt
1 ¼ cups light brown sugar
½ cup sugar
1 tsp vanilla extract
2 eggs
2 cups white chocolate chips – roughly chopped white chocolate
Instructions
Preheat oven to 350° and grease a 9×13 baking pan. Whisk together flour, baking powder, and salt; set aside. Whisk together both sugars, vanilla, and eggs together in a bowl until smooth. Add melted butter, and stir until smooth. Add flour mixture, and stir until just combined. Stir in white chocolate, and spread batter in prepared pan. Bake until a toothpick inserted in the middle comes out mostly clean, about 20-30 mins.

We have some white chocolate chips. This looks like a great way to use them up. I’m not the biggest fan of white chocolate, but these look wonderful.
