This was another great Sunday night dinner for last week.
Salmon is one of my all time favorites and it’s always easy to prepare. It has it’s own distinct flavor, yet is pretty versatile and can accommodate so many types of sauces and flavors.
As I’ve mentioned before, I love making Sunday dinner as I like the idea of having a nice meal to start your week off right. Last week, I wanted to make something different, yet easy.
What to do, what to do?
We hadn’t had salmon in awhile, so I knew that’s what I wanted. And I just played around with some stuff on hand: spinach, feta and diced tomatoes. I sauteed the spinach with some shallots and garlic, and added the feta. I tossed in some tomatoes at the end and stirred it around for a bit.
Then I seasoned the filets with some salt and pepper and layered on some fresh dill.
Which, in all honesty, probably wasn’t needed – I just always like dill with salmon. Such great flavors together. Then I broiled them up and topped off with the spinach mixture.
Served it up with some corny polenta and fresh asparagus – also broiled.
